Spring Greens & Citrus Salad with Toasted Almonds

Why it's great for oral health:

  • Leafy greens like spinach and kale provide calcium, folate, and vitamins essential for strong teeth and gums.

  • Citrus fruits (in moderation) offer vitamin C, crucial for healthy gums and preventing inflammation.

  • Almonds deliver calcium and protein to support tooth enamel and overall oral wellness.

Ingredients:

  • 2 cups fresh baby spinach

  • 2 cups baby kale or mixed greens

  • 1 cup fresh strawberries, sliced

  • 1 orange, peeled and segmented

  • ½ cup toasted almonds, sliced

  • ¼ cup feta cheese (optional)

Dressing:

  • Juice of 1 fresh lemon

  • 2 tablespoons olive oil

  • 1 teaspoon raw honey (antibacterial properties!)

  • Pinch of Himalayan salt

  • Freshly ground pepper

Instructions:

  1. Prepare greens: Wash spinach and kale, gently dry, and place in a salad bowl.

  2. Fruit & nuts: Add sliced strawberries and orange segments on top of greens.

  3. Make dressing: Whisk together fresh lemon juice, olive oil, honey, salt, and pepper until emulsified.

  4. Toast almonds: Briefly toast sliced almonds in a dry pan over medium heat until lightly golden. Let cool slightly.

  5. Assemble: Drizzle dressing over the salad. Sprinkle toasted almonds and feta cheese (if using) on top.

  6. Serve immediately and enjoy fresh!

Bonus Oral Health Tip:

Follow up your citrus-rich salad by drinking a glass of water or rinsing gently to neutralize acidity, protecting your tooth enamel!
