Grilled Peach and Arugula Salad with Honey-Balsamic Vinaigrette

This recipe is a delightful mix of sweet, savory, and tangy flavors. It's packed with nutrients and antioxidants, and the grilling adds a smoky depth to the peaches.

Ingredients:

  • 2 ripe peaches, halved and pitted

  • 4 cups arugula

  • ½ cup crumbled goat cheese (optional)

  • ¼ cup chopped walnuts or pecans

For the vinaigrette:

  • 2 tablespoons balsamic vinegar

  • 1 tablespoon honey

  • 1 tablespoon Dijon mustard

  • ¼ cup extra-virgin olive oil

  • Salt and pepper to taste

Instructions:

  1. Preheat grill to medium heat. Brush peach halves with olive oil and grill for 2-3 minutes per side, or until slightly charred and softened.
