Grilled Peach and Arugula Salad with Honey-Balsamic Vinaigrette

Ingredients:
2 ripe peaches, halved and pitted
4 cups arugula
½ cup crumbled goat cheese (optional)
¼ cup chopped walnuts or pecans
For the vinaigrette:
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
¼ cup extra-virgin olive oil
Salt and pepper to taste
Instructions:
Preheat grill to medium heat. Brush peach halves with olive oil and grill for 2-3 minutes per side, or until slightly charred and softened.
While peaches are grilling, whisk together vinaigrette ingredients in a small bowl.
