Mediterranean Chickpea Salad Stuffed Avocados

Ingredients:
2 ripe avocados, halved and pitted
1 can chickpeas, rinsed and drained
½ cup chopped cucumber
½ cup chopped tomatoes
¼ cup chopped red onion
¼ cup chopped fresh parsley
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions:
In a bowl, combine chickpeas, cucumber, tomatoes, red onion, and parsley.
In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour dressing over chickpea mixture and stir to combine.
Fill avocado halves with chickpea salad and serve immediately.
