Mediterranean Chickpea Salad Stuffed Avocados

Ingredients:

  • 2 ripe avocados, halved and pitted

  • 1 can chickpeas, rinsed and drained

  • ½ cup chopped cucumber

  • ¼ cup chopped fresh parsley

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice
